Easy dinner--Apricot Curry Chicken. Mix 1 tsp kosher salt, 1 tsp mild curry powder and 1/4 tsp ground pepper--pat on skinless chicken thighs or breast pieces to coat. Saute in a small amount of olive oil over med high heat--about 4 min/side depending on size of chicken. When done, add 1/3 cup apricot jam, 2 tsp white wine and 2 tsp lemon juice. Reduce sauce til thick. Add rice and veggies!
